Fast food that’s FAT FREE, full of vitamins AND fills you up!

HUGE congratulations to Rebecca who has lost an incredible 17 lbs in just a matter of weeks & will continue to lose more weight every week. I saw her earlier today in my Gloucester Hypnotherapy practice and she looks amazing. She was wearing an outfit which just weeks ago she was too large to fit into. She looks great and feels great – simply by changing her thoughts using my non-hypnosis weight loss technique. I promised I would send her a copy of my Watercress Soup recipe and as I typed it up, thought I would share it with you all too!

Why Watercress?

002Watercress is very low in calories and contains more than 15 essential vitamins and minerals – it has more iron than spinach, more calcium then milk and more vitamin C than oranges! It’s absolutely full of nutrients and antioxidants– and better still you can buy a bag of this superfood ready prepared from your local supermarket. We are used to seeing watercress (usually a small sprig!) on salads. You can get a healthy portion of this herb easily and quickly in a soup. I made some earlier (and added some Kale for extra nutrients) – as you can see this is a very green soup as well as very delicious. Its easy and quick to prepare and you can freeze any extra for another day

Watercress Soup

  • Gently saute an onion in some olive oil or butter
  • Add a finely chopped potato
  • Add stock and bring to the boil (add less stock for a thicker soup)
  • Turn the heat down and add a bag (or two) of watercress and simmer gently for a few minutes.
  • Liquidise and there you have it – a bowlful of goodness

If you want the benefits of this amazing herb and don’t have time to make soup why not make a quick snack. Watercress was a popular source of sustenance in the 19th century where it grew wild in abundance. Bunches were rolled into a ball and eaten ‘on the go’ – perhaps it was our first ‘fast food’
